Customers buy when you press end of day
I have seen that if customers are left at the tables alone without playing, when you press end of day they start the purchase process, which prevents you from charging them for those items because the daily summary screen is there. Has this happened to anyone else?

yes. like real shops you should close a bit early than the actual close time, which means turning your sign at 8:30PM. and also wait for all the customers to finish what they do in the store, again like in real life.

Why would i do that? I just restock and wait until the last Peeps walk out or pay. No need to close early at all. Why turn down customers wanting to give you money?

im there after 9 opening cards anyway, i shake the lone loser off their table and wait for the other game to finish, the people will leave or shop, you can check them out after 9pm, new customers just wont come in, the open/closed sign only does anything real in the morning.
If I try to start a new day before everyone has purchased items I get a box that pops up to warn me. It allows me to go back and wait or to proceed to the next day.

This is what I do. I don't even flip the sign until the last customer leaves. Usually EoD consists of ordering stock, restocking, opening packs, and sometimes reorganizing the storefront. I have plenty to do anyway, so why not just check them out? I also immediately turn the lights off after the last customer leaves so if I do an impersonation of a cake and forget what I'm doing, at least the light is off to remind me "oh yeah, prep for the next day"
