They can definitly take products that doesnt have a price. I just did this to demonstrate, i ordered a product that i never have sold before (hence the red ! on the price tag), so it didnt have a "price", yet a customer immidetly took all 4 of them that were on the shelf.
The easier solution is to not stock new things during shop hours. Which is how I've avoided this bug/issue. Not having the newesest item in the world won't break your shop, I swear (in fact only selling singles can still get you to level 100. Painfully and slowly, but it will get you there.)
1. Put up a new item. (Red exclamation mark appears)
2. Put the item back in the box. (The mark would remain)
3. Put the box on the floor. (Customers wouldn't take them)
4. Set the price
If you have workers, just put the box on the warehouse shelf and they will fill up the marked shelf. Otherwise, do it yourself.
