Alas ! I had the same problem with some kind of beetle ; impossible to catch.
I must confess I ended up paying to finish that quest...

You won't see the option to pay gems to complete the quest if you talk directly to the character, but if you click on the portrait on the left of the screen, you will see the option. Of course in the Steam version you are never dealing with micro transactions, it's just cost the gems that you get from other activities like gardening, selling fruit and fish, etc.
