There may have been a bug but I suspect you are simply misremembering. Can you link to a page in the wiki that says you can keep doing it? If it does say that, it's wrong.
Here's what happens:
You make a certain number of runs to the Salt Lions. The number is semi-random. When you hit your limit, instead of the constables, you are met by the Bright-Eyed Sequencer who asks you to take them to Grand Geode.
Whether you agree or not, Penstock then offers you an alternative, which you can accept or decline. If you accept, then the offer he makes and its associated reward is based on your "origin story". It should be noted that the "reward" for a Defrocked Priest is something most people would consider to be not a reward at all, and in that case you're better off helping the Bright-Eyed Sequencer.
Meeting the Bright-Eyed Sequencer is the end of the line for the Salt Lions. You either deliver to Grand Geode or you do Penstock's delivery. As you have already seen, there is no more sphinxstone to pick up after that, no matter what the wiki might have been edited to say about it.
