Why are so many attack times beyond human reaction times?
Why isn't there a middle-aged-man game mode :(

Well the game isn't supposed to be purely reaction based. if it was, some people would win every single fight with little to no effort. You need to do something called "making a read" so if you notice them dodge forward for no reason you have to guess whether they will commit to the bash, guard break you while you're dodging or parry your dodge attack. There are also attacks that have tells that are unreactable for most but still theoretically possible to react to. Thats why characters with easy access to "mixups" (which force the opponent to make a read) lile orochi or centurian are so powerful. It's unfortunate for those that aren't gifted with fast reactions but that's just the way the game works, if you dont like it then this isn't the game for you.

That might just be an issue with your controller or keyboard, it works just fine for me

That makes sense. But I can't imagine a new player trying this game and enjoying it.
Experienced players just always use 50/50 attacks (where either you guess their feint or you don't) - it can be extremely frustrating and make you feel helpless.

I get that, I recommend trying one of the more aggressive character that dont require as much reacting (since you'll be forcing them to react and make reads constantly) like hitokiri, shugoki, varangian guard, or ocelotl, and completely ruling out characters that are reaction heavy like lawbringer and orochi.

Think of it this way. If your character had an attack that was 100% reactable and could be defended against every single time you used it with no guesswork involved, when would you use that attack?

To add to this, a lot of the attacks are based on real techniques, and those techniques aren't just "I'm gonna swing my sword this way and he can't do anything" they would switch up their attacks in split seconds whenever their opponent tried to counter it, just like the mixups in for honor, that's also why just blocking an attack doesn't stop the entire chain

only 400 ms lights and certain bashes are unreactable. Feints and such are mostly uncreactable as well.

The basic combos of light attack, heavy, and all that is reactable. The other stuff has to be "read" or guessed or whatever or else you can't really fight anyone. Theyd just stare at you and counter any attack you threw for guarenteed damage
