Your first option is rolling away. This can work once or twice, but don't expect it to last, as she can cancel the unblockable into Wildcat's Rage, catch the dodge and go right back into the unblockable.
Conversely, if you block the previous hit before she goes into the unblockable, or she whiffs the previous hit, you can hit/GB her out of it, like a Raider zone. If she's expecting you to roll away and starts a Wildcat's Rage, then you will obviously catch her dash with a GB if she attempts it; you might seek to condition a Shaman by rolling away the first time and GB'ing the next.
If you're Kensei then they'll probably expect you to panic-swift-strike out of it and wait to parry you; I hardly even bother using Mountain Lion's Power on Kensei any.
If you can train yourself to react to the soft feint, then give it a shot in training mode, but I've never been able to do it without guessing.
If all else fails, a good old fashioned option-select zone will work against most Shamans if you happen to play someone with a fast zone with low startup frames (Warden, Roach, Zerker, Kensei, Aramusha, PK, another Shaman, etc...).
It's a tough move to deal with, and you likely aren't going to be able to perfectly counter it every time.
