Anyway, depends a lot on who you play, but in general, you should keep your guard to your right since this is the way her zone comes out.
Shamans will try to softfeint heavies into bleed, and most of the time it will come out from top since it's 100ms faster than on the sides. With that in mind you could try and make a read whenever you feel like the Shaman will try to do her bleed.
In case you're bleeding, the right thing to do would be going on offense to prevent her pounce, since hitting her mid pounce will cancel it. Altough you should still feint while going on that offense since she might try to parry you.
Feint a lot of attacks, so that she can't side attack everything you're trying to do without getting punished with a parry.
Practice against Shamans, you'll eventually get the hang of it.

If it's an unblockable heavy she can only feint it into a Gb, so roll away or interrupt it with very fast attacks.
The bite isn't feintable after it's unleashed, so if she dodges forward or back and you see orange, SIDE DODGE AND GB.
Don't get guardbroken while bleeding, then you're bitten.
