Why does the highlander have so many uncounterable attacks?
I've played 3 full matches against him in a row. He has TWO grabs that are undodgeable and unblockable that also chain into a fully charged heavy attack, he cant be interrupted while striking and the only way to dodge his side attacks is to roll.

What is the counterplay? Why does he have so many guaranteed combos but no other heroes in the game have?

Offensive stance - just interrupt him a lot with fast pokes or GB. He cant block\parry so use that. Cant cGB, still can dodge and kick.
Defensive stance - block and parry, lots of hyper armor so better not to trade.
Backstep+light\heavy from kick\grab\kickgrab

He doesnt. He just spams a kick that can transition into a grab or a heavy attack. You cant dodge because the range of the attack is roughly 5x his body size (it homes in on you) so the only way to avoid it is to roll, which consumes half your stamina and requires unlocking.

He can't block in offensive stance. If he's winding up an attack he gets armour at the end. Either hit him quickly or back off.

He isnt using offensive stance. He is spamming an unblockable chain of kicks and grabs that have so long range they cant be dodged. If i dodge one, the next hits me - if i cancel the kick, he follows up with an unblockable, undodgeable side sweep that has so long range it cant be dodged.

m8 he literally can not use those moves unless he is in offensive stance.

You are talking about offensive stance only moves. This can be countered by not allowing him to enter offensive stance...

Omg that conversation is brilliant

See, there's this thing called Light Attack and Heavy Attack. The second you see Highlander put his Claymore over his shoulder, attack him to knock him out of that stance.

How, then, can he instantly swap between blocking and kicking? A block / parry can transition into a kick which transitions into either a grab or a heavy unblockable, and he can feint his kick to block incoming attacks.

Where's the counterplay? If you dodge the kick the grab lands. If you roll under the grab the heavy attack lands. If you parry the heavy attack he feints and parries your parry attempt, transitioning into a kick which transitions into an unblockable heavy attack.

But he doesnt put his sword over his shoulder. He uses an unblockable kick with an extremely brief wind-up (faster than most light attacks, except Warden's up light and Valkyrie's dodge stab).

The only time he ever uses a heavy attack is after landing either kick or grab. To dodge the grab you need to roll, which requires unlocking the camera and takes longer for you to get back up from than it takes for him to recover from his missed grab.

If he's holding the sword like a total ♥♥♥♥♥♥ mongrel, hit him. If he is not holding the sword like some kind've degenerate, do not hit him.

He never holds the sword over his shoulder unless he has landed the kick or grab. The kick guarantees the heavy attack to hit, the grab guarantees the heavy attack to hit. The only times he ever uses heavy attacks is when it cant be dodged.
