I can't dodge in the middle of an attack though.

For details,
1. Don't do things that allow unexpected side dodge attacks (like attacking recklessly without knowing your opponent).
2. Bait out side dodge attacks using feints. Better feint unblockables rather than normal heavies.
3. Punish the side dodge attacks when they come out. You need to train yourself to parry/deflect/GB/whatever in Training mode to understand how to deal with them.
But it's most important trying to read your opponent. Think about what hero they play, what options they have, which they will most likely utilize against you at which specific moment, and try to deal with them. It won't work all the time, but this is PvP after all.
