Not every game has a mass effect-style character creator. Some games have certain protagonists.

OP, I had your problem too, except I wanted to replay as the opposite sex to what I had previously chosen so I could hear all the voices. Unfortunately, Ubi stores your sava data in their cloud, so you'd have to appeal to them to get it deleted.
Some dude actually did this a while back and almost got caught up in a legal case because of how awkward Ubi were being about this incredibly simple feature that should just be in the game already.
I solved my problem just by watching a Let's Play with the other voice, but I'm afraid there's nothing you can do apart from either sucking it up or appealing to Ubi and hoping they're having a good day.
It isn't an ME-style character creator; you can pick up to 3 variations of armor for male and female versions; OP did not want a versatile character creator, he simply wanted to change his choice.
Additionally, the characters are NOT fixed as certain protagonists, as they allow you the choice to pick initially. It's simply down to Ubi's inflexibility that you can't change it later.
I would have loved to see my options by restarting the story mode but that's impossible. You are asked to chose your outfit and are told it is permanent, but the options are not stated clearly. This design let me to believe that I could have chosen a male character for the first chapter (I'm still not sure that that's not possible). But since restarting story mode is not possible, there is no way for me to confirm either way.
I'm left with the conclusion that I made a mistake in chosing a gender that I did not want to role play in.
This is not a statement towards any gender, I believe the players should have the ability to choose the gender based on their preferences.
Me, I would like to play as a male warden. The game design has let me to believe that I can chose the gender at the beginning of the game.
If the games wants me to play the first chapter as a female character, that's fine with me, but then I would need a little more lore beforehand.

I believe one solution could be to create a new Uplay profile and then start new from there but I don't know if it's possible to have two Uplay profiles linked to the same Steam Account.
In the end this remains a game-breaking design flaw for me and any workaround appears to be quite time-consuming. I chose to stay away from this game but whish everyone else a lot of fun playing it!

....i don't understand this ♥♥♥♥♥♥♥♥♥♥, tbh, and quite frankly, that's what it is. How many games let you pick your gender? More these days, but relatively few by comparison to all the games out there. You're playing a set of characters, deal with it. Do you go ♥♥♥♥♥♥♥♥ on the Battlefield forums because you can't play a female character?
Open world/pick your gender/character games have really spoiled this gen. Of gamers if we're now getting complaints that once you pick one you can't change it.
I guess in the FH world, they don't support transgender :p
Sucks you can't readily change it (or restart), but it doesn't bother me that much.
Those of you who are laughing at TC, though, would definitely be in here REEEEEEEEEEEEing if someone wanted to play as a girl and there were only guy characters.
