Everything you noted is pretty much working as intented ,you just do not know how to counter them because the more advanced turorials are hidden in the how to play menu.
The raider unblockable can be countered by a parry wich is a mechanic they show in the advanced tutorial.you can also dodge it on faster classes.
The conquerer can go into a turtle stance wich blocks all incoming attacks while consuming stamina for each hit taken,when he does so just grab his ass and everyone will be able to pound him.
As for the berserker he almost always follow a left right attack pattern because that how his long combo chain works and that is how he gain momentum so his 3rd attack will be unstopable by on of your own.(when he flash)
There many more mechanics in there like every orochi second hit will go trough a block or that you can cancel a heavy hit midway with a "o" on ps4 or "b" on xbox controller.Basic raider combo is like (heavy right attack -> cancel -> foward dash+light attack for a daze -> light left attack -> grab -> light right attack)
It is very suggested that you do the advanced tutorial and watch both basic and advanced tutorial for your specific class.Also playing custom games against a bot of every classes will greatly help with dealing with them.
You can also duel a brain dead bot in the how to play section to try out harder combos.

also your block has a timer, you can see it degrading if you hold your gaurd to a side so try to guard when the time is right.
some classes have smaller guard times than other i think.
Basicly you need to treat the game as if you were trying to learn tekken or any figther really.

If you have a hard time dealing with the fast chains from assassins at first, try the Conqueror and enjoy seeing them panic afther the first attack youll block.
Thing with conqueror is every block he does(even a normal block) will stagger the enemy(almost as much as a full parry i think).So NO enemy will be able to chain multiple strike on you.All these newbie playing the assasins classes that only know how to spam, you will destroy! While slowly but surely getting better at blocking because you have a lot less to worry about.Also with conqueror instead of a parry you get a free heavy attack in if you use the usual parry method.
Hes not for everyone because his attacks are very limited but its worth a try to give the game a second chance ;)
