Upgrading strengh increases your damage output
Upgrading dexterity increases the likelyhood that you will hit an opponent (attack) and decreases the likelyhood for you to get hit(defense) Whether or not you get hit involves comparing your attack and defense to your opponents. If your opponent has higher defense than you do attack, then it may dodge your attacks once in a while. Conversely, if you have higher defense than your opponent has attack, then you have a small chance to dodge its attacks.
Upgrading vitality increases your max health and max stamina. This upgrade is unique in that it is not a required trait for wearing equipment, meaning you can not upgrade it at all and still be able to wear everything in the game.
Upgrading magic increases your maximum mana, which is needed to cast spells, and is required for staffs and robes, and is also required to unlock spells.
Of course, you also need to use skill points.
