Do you have to switch to playing as your offspring at some point? Do you have any control over how they will look?

Yes, at some point you can play as your offsprings, you can customize them if you don't like how they look using some items.

You don't Have to switch but you can, If you do wanna switch at a later time you have to pay attention to how old they are, though the game will ask you at the coming of age ceremony if you wanna switch.
If you say no you won't be able to switch with that (Adult) child in the future, so keep that in mind.

Well there is inbreeding since the tree doesnt track that long. But all in all go crazy i guess
