Aside from this great idea I think the biggest change that needs to happen is to make monsters be able to catch you hiding if they target you and see the moment you enter the safe spot. It's just kinda sad that they can chase you and no longer see you when you hide literally in front of them.
I also like the anti-farm system you mentioned in 4. and the rework of new areas.
The only thing I would consider mid is the endless. I feel like having only 1 monster is too easy, but having 3 would be too hard unless let's say only 2 at the same time can roam the bakery because they would just make it too crowded if you know what I mean.
But I'll give you an initial clue. You need to rescue Sweetie and then throw 2 pies at the two triggers that activate after Sweetie. They don't change visually, but when you hit them, you'll realize that you're in the right place. After you hit the triggers, an easter egg will appear on the map.

Yeah, Cakerons being able to see you if u hid near them would be a great spike in difficulty, so I like it already
Yup, I understand what you mean with the Endless Mode being mid, I would pretty much consider it that too, but it at least would be a little more challenging than the current one. So maybe Endless Mode would start with like 5 Waves of single Cakerons, and then after that two would appear

If you want exact steps, they are:
1. Find Sweetie
2. Save Sweetie
3. Bake two cakes
4. Shot two cyan squares in Cakey's Bakery Hallway (I used cyan cakes, I'm not sure if it will work with others), after you shot them, you will hear a sound, then you know you are in a right place, I'm also not sure if it's randomized but if so, I have SS of this secret
5. After you done it you go back to the place you started the game (Kitchen Storage) and you will see something new
About infinite time between monsters. I think it's legit for normal difficulty, but for hardcore Cooker Jr. could just deactivate between monsters and it's done. You can still explore and take a breather, but can't prepare for the next monster safely.
About hiding spots. I'm not sure this game is balanced for catching a player in hiding, because Cakey and Bane are very fast and if they spot you - they will see you every time you hide, so there would be no escape. As well as a hiding timer is not very good because some spots on the map are dead ends and you could waste a lot of time just waiting for a spot to become safe to go and collect ingredients. This could be dealt with by something that can be done only while monster is roaming, so the player would be motivated to risk and go out to do this something. For example some machinery would activate or ingredient spawn will appear. OR mosters could place traps on the map, which would slow you down or root you for a couple seconds if you step on them and notify the monster. Still not sure if it's needed, cause the game is fun as it is and I don't think that this kind of additional difficulty was intended in the first place.
About Endless mode... Well, not sure if I would be interested in playing this mode if monsters would constanly become fatter and fatter (in terms of HP), it would still be very repetitive and defeating them fast to meet with a new one is good, this rotation of enemies keep the gameplay more fun, but I imagine this mode with some kind of random events, for example: x2 speed for monsters or some doors are now locked, which forces you to use different paths, recipes for each pie changes (by the way they are already a bit random, if you didn't notice, just like ingredient box spawns) and that kind of stuff.
