roll until she finishes her red move. Also start an attack with a long shield attack and hit twice. Hit twice and back off. She's easy just takes lots of patience.

just block her final attack swing after dodging her first 2 swings.

Second stage - evade first attack, then block block and 3x attack. Easy.

I found it pretty easy. Once she starts to attack, just roll away and keep rolling away until she stops. Then put in a little cheap jab. Rinse and repeat about 10-12 times.

I actually put in a dip when I was fighting her.

I just beat her, when she leads with normal strikes, block x 3 then attack x2.

When she leads with a jumping attack, she will end the combo with a heavy blow, either dodge this, or counter with a perfect parry.

She will also do a random heavy but it's easy to avoid.

On a less relevant note, they don't pronounce Boudicas name right in this game.
