it's just a big guy wearing a skull and bones of a dead animal: the game just calls them the "minotaur".
I just had this encounter bug out actually, he got stuck in the leg of the Wickerman and I couldn't damage him. I stood by him to let him kill me and when I ran out of HP the screen dimmed a little and the music stopped and I didn't die. I just shut the game off, guess I'll see if it's broken tomorrow.
At Gnotts 60% health (about), game saves and he wont use the bad hit after that - He starts to use a rush-move instead. But same m.o. - stay close, roll in - hit - roll out.

Actually you are wrong. I try to use only the dodge movement instead the shield to be closer to him and he does the "mambo jambo" 3 times in a row... the only way for me to avoid it for a couple of seconds it attacking him, but since he defends all my movements, it's pretty impossible to finish him.
