Unknown girl statistic
On the levels screen of a girl, what does the number with the shield icon with a swirl on it do? This icon is used to represent set and player experience, so I presume that it represents experience. But I don't understand what that would affect.

I suppose it just represents the amount of "set xp" you get for leveling up that girl. The "set xp" also counts towards your personal "hero xp", which maybe why they share the icon.
But I'm just guessing really :)

The set XP is a bonus you get for each girl in a set, as shown in the girls screen. The name of the set is on the left side and each higher rarity will get a higher set bonus.
the one thing that is missing from the stats is how many gems it takes to activate their abilities which seems like an egregious oversight.

Copy/paste from the Wiki:
You may use all 5 active skills per turn, combining them correctly for the strongest attack. But the used skill will not fill the gem scale on the turn you used it.

A common card has no active skill
Rare card - 6 gems
Epic card - 9 gems
Legendary - 12 gems
Mythical - 15 gems
