Gathering vs item drops

I just would like to understand the difference between them. Does gathering mean the amount of items received? While item drops mean the rarity of items someone could get?

In what context? Gathering I associate with quests, as in "Grab X amount of y", whereas item drops are a stat that increases the chance of you finding something.

With gear there is a gathering and item drop skill

IIRC Gathering is going to be you picking up stuff off the ground, and Item Drop is from killing enemies.

ok so farming, fishing and mining would benefit more from item drop skill instead of gathering?

Isn't gathering just the bonus to the main stat of all gatherers? Basically it increases the damage you do during gathering events. Item drop affects all drops from gathering or kills.

I mean this. It's pretty clear it says "+5 to gathering skills", not just "gathering", so it affects all gathering skills. Unless you mean something else.
