Personal Requests
They seem to be endless. I beat the story and just been doing the class-specific quest grind with requests sprinkled in, but I have to wonder if they are infinite and auto-generate or is there actually an end to them. Anyone know?

Depends on the requests. If you are getting requests from people on your island, those are randomly generated. If you are doing the ones elsewhere, they tend to be little mini-story lines. There are even a small handful of these mini-quest lines that reward you with a Strangling. (Once you figure out what type of quest gives you a strangling as a reward the rest are easy to spot and make a beline for.)

I noticed that each character on story islands that has quests has 3 quests total (arena guy is the only exception). Some don't unlock until you progress further in the story but it has been always 3, not less, not more out of the ones I completed.

The quests on your personal island are autogenerated and seem infinite.

They are inf for your island peeps with houses, that's the point of houses so you can grind them for Rep gains and gold. If you have everyone max rep, just ignore them on your home island. You can tell them no to the requests to make the bubbles go away and they don't ask again until you talk to them and ask if they need something.

The story line quests do end, and they essentially just scale through all the equipment. Someone will want a weapon from tier 1 -> max, armor, items, foods. cloths.... etc....

They don't.

They don't only require equipment (one girl is making a fish encyclopedia and asking for three fishes, one person is being harrassed by birds while doing jogging and asks you to kill birds, one guy asks you to kill napdragon because he boasted to his superiors that he can easily kill it, etc), there are many different goals not tied to equipment and some of those mini-stories are kinda funny.

And even the part that they go through all the equipment is wrong, there are so many recipes in this game but they only ask for few of them. The rest of the equipment is not required and you may end up completing all the tasks without crafting most of it.

I didn't mean literally all of it..

I mean there is a fish person, a hat person, a cloth person, a bug person, a food person, a wood person... etc.

In that case, yeah, there are quests related to each gathering/crafting life and each person gives 3 tasks, usually they are just progressive, like 3 types of shields or 3 types of greatswords or 3 paintings of champion fish from each rank, but some people ask for different things on their three tasks. For combat lives it's just a general task to kill some enemies and it doesn't matter which of your combat lives you use or even where you will kill those enemies.
