its an overkill mechanic the last hit when you do a decent damage more then what health the gather has.

Yeah, just get the health as low as you can and then hit it with a heavy attack/charged attack /special depending on what you have at the time.

Nope, it's purely overkill dmg, it's not related to the number of hits or time needed. Even if you one shot it with a single hit, if you just barely deal enough dmg you won't get an excellent.

Charge Attacks are key for getting Excellent Ratings for Gathering Spots. Without them, you will never get Excellents even with using the strong attack. Get the Gathering Spot to a small sliver of health, then use a charge attack for maximum effect. Be careful that your gathering teammates don't kill the Spot before you get to use your Charge attack.
