How do you quit your job?

If you dont reach your quota, then you will be fired (with no penalty besides losing your job). If you want to get fired, then stand in your job but dont do anything. If you avoid your job the heat will go up :)

but how can i "force" an inmate to quit his job? for example if i want to get in the kitchen, but the job's already taken

Knock them out and tie them up by applying tape or rope to them.

Yeah the game's tooltip on that says "if a job you want is already taken, then try to create an opening by preventing them from getting to their job" it's up to you how you do it.

My method is knock em down and then carry em far far away from their workplace :D
Probably not most efficient but still hilarious.
