Roof+Vent+Tunnel Escape Story
So this is an escape I'm pretty proud of, it was stupidly elaborate, but great.

THE PLAN:
Use a combination of the roof, the vents, and finally a tunnel, to escape in less than 21 days (my previous record)

So first off I'd need to put a hole in the back wall of my cell to access the utility hallway.
From there, I'd go west and up onto the roof.
Once on the roof, I'd have to dodge the spotlights while running east to get into the vents.
After getting into the vents, I'd have to cut my way up north to the employment office, drop down, unlock the staff door, and run outside.
Finally, I'd need to tunnel under the wall.

THE SETUP:
I needed a lot of equipment for this, so I saved up money by working the Metal Shop.

In order to have the time and energy to make it to the tunneling phase, I had to use the empty cell to get into the vents and clear a path, stashing away some equipment.
In the vents, I had hidden a screwdriver, timber brace for the tunnel, and my sturdy cutters.
Behind the cell I had stored a shovel, a pickaxe, two legs of chicken, and a plastic staff key.

THE EXECUTION:
Would've been a lot better if I wasn't an idiot.

To start off with, I couldn't be bothered to get a plastic utility key, so I ended up using plastic spoons to dig a small tunnel underneath the door that led to the roof.

The first time, I hadn't pre-cleared the path along the vents, so I didn't have enough energy to dig the tunnel, even if I had, I didn't have a brace.

The second time, I'd forgotten to remove the slats directly in front of the ladder.

The plan worked the third time, though.

In the process of all of this, I became worst enemies with an old man, broke several toilets, met Lee from The Walking Dead, and threw a lot of Hot Chocolate around.

how do you avoid the guards noticing the missing grates?

Really elaborate. You're going in to a hell of a lot more detail than you'd actually need to to escape, but great job either way. When I did this, I just pre-opened the vents all the way to the employment office. Took the red key, a guard outfit, a sturdy shovel and a timber brace. With that, I just left my cell on the night of the escape, and there were absolutely no bars between me and the outer wall, so I was entirely ready to dig right underneath that wall.
