For some stupid reason, Honey Badgers take three arrows no matter where you hit them. If you hit them in the rear, it takes four.
Tigers take two if you hit them in the head, otherwise it's 3-4. Bears I'm not sure but I do know it's more than this. Rhinos take just about forever but it's easy to keep them from getting you by hugging a tree and occasionally touching them to recover arrows.
Just about everything else takes only one shot if you hit it in the head. Even heavies only take one shot if you hit their head, although it can be hard to hit them. I found it easiest to hit a heavy in the head from the sides, not the front or back.
I also only ever ADS (aim down sights) when using the bow, as hipfiring can lead to an unpredictable shot that won't kill or possibly even miss the enemy. If I do hipfire, it's only when an enemy is extremely close and I need an arrow out immediately, so I don't hold fire I simply tap it.
