1 is horribly outdated and 2 is simply not much fun
2 was the most beautiful (now, perrhaps, 4 is) and had the "real man" Bear Grills feel.
It was amazing if you like the African setting such as in Johnny Mad Dog, Shooting Dogs (this one was disturbing) and other movies about warfare in Africa. It's also the most "serious" part of the tetralogy.
3 is much more into fun and mayhem, the tropical nature is beautiful too, but technically the graphics were slightly weaker (2 was a PC port to consoles, 3 vice versa). FC3 is light-hearted and sometimes comic, but has solid shooting, a lot of weapons, a huge world and collectibles. It is basically Skyrim with rifles.
4 is same as 3, but in a Skyrim setting.
Start with 2 or 3.
Farcry 2 is also very good in some respects. I never completed it but the story felt a little less interesting to me. However, the setting was entirely interesting to me. The African savanah looks and play brilliantly in the Farcry universe. Constantly regenerating guard checkpoints though gets annoying but worth stepping into. They also have a few mods out there that are easy installs and add some graphic and gameplay improvements.
Farcry 3 is a return to the tropical setting. Lots to see and do. I haven't finished the main story as of yet but I don't particularly care for where the story goes and I absolutely hate the character you play.(oh I hope they don't give us a pansy character in 4)
So I suggest start where it began and make an effort to finish it even if you start another. I'd reccommend at least starting FC2 so you can see the African setting but its not necessary to finish it or at least right away.(not that important) And if it were me and I had not played it yet with FC4 on the horizon, its the latest so I'd start that one and if you like it, you have FC3 to fall back to when you are done for a similar experience set in the tropics.
4 retakes the set up of the 3 (rebels vs bad guys lead by psychopaths), but takes off the meta and simply gives an american hollywood bad written story.
1st is old, a 2000's FPS, with another game design, the original one made by Crytek. personnaly its the one I like the least (but I loved Crysis 1 from same devs).
2 is the most underrated but the most hard to enjoy too. It uses a "immersive realistic" tone without being simulator. You run short, walk slow, travel around a huge country with few fast travel, must deal with bad balanced gameplay mechanics (infinite patrols on roads, malaria, gun jamming)... you should try it with the Dylan's realism mod recently made for it, which rebalances a lot of things and gives the game a harsh and better feeling. This is, as Rifled said after my post, a hate love. For me, the art direction and story of the two are way superior to the others, the gunplay still pretty cool even if less arcade.
F2 was a total different take on Farcry compared to 1. For me it was a hate love. I hated my first playthrough, but loved the 2nd and 3rd time. Lots of fun, except the milaria. I actually enjoyed the degrading weapons seeing my trusty sniper rifle take on rust the more I used it.
FC3, meh. Played through twice, once vanilla, but lot more fun with ziggy's mod on 2nd playthrough. I would rather work for my weapons then wait for story progression or tower unlocks.
FC4.....I haven't played yet!
Since I have some time until FC4, I think I'll play a few missions of each FC1,2 and 3. Then I'll play through FC4 and go back to the other games once I'm done with 4.

Blood Dragon story is epically cheese ball. That said, I played it the day before yesterday for the first time and went start to finish and got every single achievement without ever even getting up to pee.
Farcry 3 would be my choice to start. I don't know how good FC4 is yet, but I'd be afraid FC3 would look bad in retrospect. It is a lot of fun if you play it now, then you get the joy of playing it, at least through the story, without FC4 making it look bad in comparison. So 3 and then 4 is my vote so you get the best experience of 3. Hated 2, and 1 is pretty old...
