Actually you just need to keep an eye on him and be ready to aim your bow every time he goes into an attack, whether it's an open mouth one you can use or not.
I shot 18 arrows in this vid, only half of which are necessary. You can if you want tap R to cancel shots, which I did on the first shot, but it's not necessary. I was picking up arrows without even intending to.
If you mean the Speak No Evil speedrun, yes. I also plan to do a speedrun of the Willis Kill or Be Killed mission, which is one of my favorites.
Yeah I imagine that wouldn't end too well. The Honey Badgers in the arena are WAY worse though.

Did you get through it yet? Just stay on the move but mainly just get to the other side every time the bird starts turning blue to do the spawn attack. Avoid the ground skirmishes at all costs!
Funnily enough I think I would still be struggling or I would have given up if not for your advice.
