Supports Mixed Res Eyefinity with 16:9 - 21:9 - 16:9. The game has an FOV slider in the graphics options, but it disappears when Eyefinity/Surround resolutions are used. The FOV can manually be set in the GameProfile.xml file.

Change the value of FOVScaleFactor.
Default is 1.0. The slide offers a range from 0.75 to 1.50, though you can set virtually any value you desire.
also there is no FOV slider available in 21:9 aspect ratio i think .. as that aspect ratio was added after the game shipped in Patch 1.5.0
and a non legit copy has no FOV adjustment

also if you have a non legit version .. you have no control over the FOV ..as that was added in a patch just prior to release
shipped version of the game was already @ 1.2.0

non legit copies do not have an FOV option..also the slider is not presant in legit copies if your using surround or multi monitor

what screen(s) are you trying to operate that is giving you a problem ?
if you have a non legit version (since i can see you do not own the steam version )
there is no FOV control as your missing a patch that added it
if you have a legit Uplay only version ..ask Ubisoft Support
if you have a 16:10 aspect ratio screen yes the game will be letter boxed as it shows on the site i linked
the default FOV is 1.0 ..and that was your question
what was the range and how do you adjust it ..

Baseline (Widescreen) Solution & Issues
Graphics options start with the Aspect set to "Auto". This autodetects your native aspect ratio, and offers those resolutions. You can manually select a different aspect ratio and resolution. You must manually select the Aspect Ratio first.
If you want the proper FOV in 16:10, you must edit the GameProfile.xml file. If you don't edit the file, the game will be letterboxed on top of the 16:9 FOV. This is only needed for any FOV "less than" 16:9. Using this setting in 21:9 or Eyefinity/Surround will result in Vert- gameplay.

In degrees, what FOV is represented by the default value?
FOVScaleFactor="1.5"
if you have a multi monitor setup see the WSGF page more them 5 times
yet you have posted no info about your setup nor your version of the game
so contact Ubisoft support
