Free Roam do whatever you want.
Unless you have the editor and know how to edit UE and make a new timetable.
That is about it.
In the PC editor you can create a complete timetable but that is far more difficult to do.

There is no Mod, and you cannot save these. You have to do this every time you want to run a Train outside of Scenario's or Timetable.
However, I wouldn't really call this really poorly implemented feature a "Schedule", as you can't exactly schedule anything through it.
All you can do, is set your start position, and your end position.... and that's literally all DTG thought we wanted...
I use this feature all the time, and if you want more complex scheduling, then grab a pen and paper, and take a bunch of notes for your arrival and departure times so you can manually enter then each time you reach one of them.
So for an example, the video below is a new Train I placed inside of a 24hr Timetable Service, which contains "6 Waypoints".
However, I can't set all the 6 Waypoints straight away... so to do this and completely break immersion, this is how you HAVE to do it.
- At 02:40 - I set my first Waypoint to a Siding. - I don't set the Waypoint earlier as it would put a Red Light for any Traffic passing through on my Line.
- At 05:10 - I set my second Waypoint to head to another Siding - I waited for the AI to reach a certain Block before I set my Waypoint, otherwise I would have gave him a Red Signal.
- At 10:02 - I set my third Waypoint to the Mainline down in the Yard.
- At 11:00 - I set my forth Waypoint to wait before entering the Mainline.
- At 15:48 - I set my fifth Waypoint to prepare my Service parked at Selhurst.
- At 18:04 - I set my sixth Waypoint to head up to London Victoria - the Commuter Stops I make on the way are not a Waypoint.

In the Game, this is the only way to run a personal Schedule, and it can be tedious at times and impractical. There is no way to view a text base Schedule for each Route, so if you want to do this and not interfere with the AI, then it can take a lot of trial and error.
DTG do not think of us as Railfans who would need features to work well and up to standard because we are only wallet fodder to them, and nothing more.
There is the Unreal Engine Editor thing available through Epic, but I hear it's very complex, and takes a lot to learn.
