Shoot with bolts?
On several fields there are objects that say "shoot with bolts". How do I do that? THere's nothing in the tutorial about bolts AFAICS.

You will get Bolt skill later. You will need to place tower, insert gem into it, enchant gem with Bolt spell and set his priority for Structures or just select the object to focus fire on it.

crap. So how do I later find those fields again?

You can replay any field at any time. Those containers does not have anything important so you don't have to return for them, they only drop a little exp and resources.

And an acheivement for breaking a certain number of them, if you are into that sort of thing.
