Note: In Chasing Shadows, mobs do have regen properties which kinda works like armor, because it negates some of the poison damage due to the mob healing over time.
Armor is a direct buffer before damage is applied to the hp of a mob.
For example, if a monster has armor 10 and hp 10, then you need a gem that does 20 damage(unless it's poison) for a 1 hit kill. If your gem does less that 10 damage( less than the armor of the monster), it'll result in 1 minimum damage to the hp of the mob and the gem will need to hit it 10 times to bring it down. Hope that makes sense.
