Ai pulls money out of their ass in while administration limits your expansion qnd makes you starve for resources.
All if this on N/N playing Aegean factions.

Then I started a new game and put back my old TW glasses and mostly beaten the first nation before negociating a peace treaty with them leaving them with 1 region and most importantly they now had a border with those pesky Assyrian nations lol. Then because Ur was in a corner of the map I was able to beat them before they got too strong. Meanwhile I negociated treaties with other nations I shared a border with securing one of my front. I made sure to leave them in the green to make sure they had the impression of getting away with a good deal. Later I arranged a marriage with the biggest of those nation leading to a whole game of "trusted friend" status between both of us.
I finaly won the game still in the crisis phase (1 point from the first phase, lol) and won a minor victory by kicking the hittites and all those pesky invading barbs lol
My way of playing is not the best but all of this to say that I had to adjust to the game. I never was the "king of the universe" (no less) but pulled strings in the background.
Being easy does not mean that you dont have difficulties. You begin with excellent units, the best Royal tradition, wealthy regions, amazing divinities ... Maybe you should reduce the game dificulty or look up for another game that suits you.
I don't think Ramesses has ever been an easy faction. It may say it but I have struggled to play him since the game start. Egyptian units can't stand up to Canaanite medium/heavy units in the early-mid game. Most the Bronze is in Northern Canaan too so you're at a disadvantage.
keep fog of war turned on if you want less factions declaring on you and also.. make sure your armies are full stacks, the unit quality doesn't matter, this is how you deter the AI from declaring on you in my experience.
Also I build the forts that offer reinforcements in each province, i don't know if that factors in but it probably does.
If you just want to learn though, set the AI to passive, it still declares war and stuff but a lot less.
Also set the game up so diplomacy better favors you and for better happiness in your provinces, if you want things to be more favorable to you, also don't auto revolve early game.
I have found that doing custom settings tailors the experience to just how i want it and its a great feature.
This can be changed in advanced settings so they cheat less.
