"Have you tried looking at the walls?" Yes jackass
"Look for red splotches" like duh, I did the tutorial
I'm pretty sure everyone whose asking has been through the loops. I've been through my entire first section, meticulously. I have had just 2 iron ore spots spawn. And haven't found any yet in the elven quarter.
There is some iron in the Elven Quarter. Don't waste it, you need to focus on a steel pick axe. Once you get down to the mines, you'll have all the iron you need.
make sure you check behind walls, thes occasionally large nodes of ore inside the rocks behind walls.
Coal and Copper is much less common, salt and silver is lower deeps exclusive, gold is mines of moria and desolation, mithril only in under Caradhras in the darkest depths. Tin can be found here and there. Some small rocks of tin regenerate often.
After playing on two campaign maps and a sandbox map it seems like some seeds don't give you early game resources, such as iron, as readily as others do. I guess the OP can simply swap to a different map, farm some iron, then go back to their original game if they really can't find what they need.
