You need to find three moon shards. Nicolas actually mentions them and where to find them his final phase
The first one is at the Father Gascoine arena (the actual arena, not the circle where you chase him). Just drive around the edge of the map and you will see it
The second one is at the forest arena where you play capture the flag with three snake witches. The shard is in the middle section of the map behind the stone wall/metal grate. You would have to use the trampoline in the middle island and then cancel your jump with a melee weapon to get there
And the last one is at the Nicolas' arena. During the second phase you'll lure him into a red portal, and by your left side will be third stage bridge which wasn't yet raised. To the right of it will be a narrow corridor leading you to the small room right above the second arena. That's where the last shard it
Just get them and use them. I also won the level they were in just to be sure, but that may not be necessary. The key giveaway that you did everything right is if you can't grab shards anymore

Might be because you already took it and used it. As far as I can tell, you can't pick a moon shard a second time. Game's way to tell you you did everything right. I suggest getting the rest of them, creating a separate save file and going for the ending
