Why can I only accept three tasks per day?

Or it could be down to your level or the scrap deals you have not finished. Could be a hard cap on how many you can have. I am maxing my scrap deals out and doing the last day ones and sleeping and then adding more. I would always have at least 6 to 8 scrap deals always going never letting it drop below 3 and thus I am always got them ready. Plus check the days left on the deals you might be actually unintentionally having them run out and not knowing

Later I got a 4th on occasion, but mostly 3-4 scrap offers.
It gets much "easier", as once you can hire an assistant, they will get you another ~3 every day (based on their skill level), in addition to the ones you haggle.

Short answer is you likely need to continue levelling up. Early game you only get a few scrap deals a day offered, as you obviously won't have the capacity to handle too many anyway. I'm only at rep level 18 now, but I'm getting around 5-6 offered per day plus my assistant is finding me 6 more.
As you level up and increase your staff, adding trash collectors, you'll get more.
