Similarly Sofia is actually kind of bad. Her base set up may seem good when you first pick her up but it quickly becomes apparent that she dies, a lot. That being said for PvE you really want a net so you can capture the cool skins and creatures you encounter. With the coming update we will hopefully be able to use spidaurs for that job, until that time comes the best alternative (IMO) is to take a cyclops with heavy club and net.
Pip and Horatio's builds are generally pretty solid. Heavy shield+freeze and awe is a staple frontline tank set up, while human with hammer is a nice way to deal with heavy helmet wearers (of which there are a lot in PVE).
Yosef's set up I'm not so fond of here. If you are running him on a spidaur I'd go heavy bow, but bows in general seem a weak option for PvE. Go mortar or throwing axes, heavy bow on a spidaur does work though.
So with minimum edits swap gluten and sofia for a cyclops. Maybe change yosefs gear.
With a little more editing the following units are pretty solid in PvE.
-Vampiress
-Wraith
-Hair troll.
-Electrobot.
They are good all rounders that can balance out any PvE team.
The big problem with cupcakes, mascots, pixies and rainbow horses is they can all die very quickly and suddenly, not something you want happening when you are out doing PvE fights.
Kobolds, zombies and gnomes all suffer from the fact that they pretty much have half the health of a normal unit as they come in pairs. Troll mom just takes up too much of a team to be good in PvE (plus troll mom fights can be really slow) and gorgon... gorgon just feels a little meh at the moment. It isn't a bad unit, it just feels like the other options are better.
After all is said though cupcake does have a place in PvE asit can be used to heal NPC's in quests that involve keeping a specific person alive.

Pip: always good, stops heavy helm tanks from stopping you
Yusef: im not fan of bows, if your looking for damage i would use mortars, like the NGR mortar, or if you want utility (stuns), i would use the ice mortar
Sofia: the net is entirely useless if your planning on capturing units to use with it. It may be a good stun but it would be better to use a shield instead and give her a heavyer helm
Gluten: no point in running a healer in PVE. you can get random heals just from fighting, and you can just bring campfires to use, you can even find them easily
Spider: really good for constant shots off using your ranged weapon, you can also capture units with her, she can even be a backup tank, forcing units to attack her by stunning them and not making them able to go around her.
