keep topping bins FULL . When day is done place topping TRAY into fridge to right of fryers.
Onions and tomato crates can be shelved. But once cut or put in the topping bins, topping bins are placed in fridge. for next day. They wont expire that way. Faster to set up next day.
The fridge by grill is meant for Beef and chicken that is UNPACKED. Meaning you open frozen beef and fully stock the BEEF bins with 18 each then keep them in that fridge. Rest goes in DEEP freezer (As well as fries - chicken patties not ready to cook) in other room. Don't put FROZEN beef in the fridge, tray it so its ready to go on grill.
Buns on wrack in plastic wrap DO NTO EXPIRE. only thos left out on counters.
SIMPLE LIST:
Take 4-5 trays for Beef - unpack frozen into 18 count trays - stick in fridge by grill. It will not expire. Keep frozen beef in deep freeze.
Produce on racks:
Take produce and make FULL Topping trays. Left overs in topping trays go in a fridge. Stock before hand - keep full and it wont expire if refrigerated.
