Also, I highly recommend Echo S in its entirety.

Also i loved og FF7 as a 13y old in 1997 but it is quite jarring today. And i don't even mean the graphics (which are fine). The dialogue and how the story is conveyed is so much better in the remakes, i feel like most people, who criticize them for not exactly sticking to the original, have not played OG FF7 in almost 30 years.
I’d recommend new threat mod as well since the mod just adds interesting additions to the pretty fun combat system
Also when you play it make sure to turn the battle settings to active and up the speed to the max, in the settings menu, makes the gameplay far more engaging since it’s very fast paced with those settings.
Enjoy bro, it’s a one of a kind game ngl lol, visual mods just allow the artistic visions to no longer be held hostage to archaic technology
Project edge has decent work on what they have finished
Remake is still great though.
At least watching a pretty complete synopsis on youtube will help ya coming into the remakes
