What is there to do after you unlock chapter selection? Anything particular meaningful or lore rich?

Doing 7-star Hotel achievement has pretty much whole game as a dependency, so there's this. Hard mode is also really hard, so you can do that. Oh, and Protorelic quest line/Gilgamesh island. But nothing groundbreaking, so if you came only for the main story and don't enjoy the game-play, then I suppose you're done ;)

Well, you can see all the date versions by selecting them in settings, and finish up any missed quests, both of which can be insightful into characters That's about all I can think of from a lore perspectives. You can play again with your current party/power/materia to see the story again more quickly. The rest would mostly be finishing up battle challenges and minigames for trophies or rare items, and Hard Mode is to gain power for those - but I don't think there's much story there. (Although in Remake there was a reveal for finishing the challenges... haven't made it that far in Rebirth)

I went back and finished up the battle objectives for the intel battles (and I didn't even get a lousy t-shirt).

There's plenty of new battles at the Gold Saucer Battle Square if you haven't seen those) as a for instance.
