This is rather common RPG's and JRPG's where you can have partners, it's just more natural.
I don't know what makes her "canon", where is this information coming from?

Tifa is clearly the most narratively significant romantic interest - I mean, there is the childhood promise Cloud made to her, the fact Cloud complete mind-f*ck situation (or rather, the wanting to become a Soldier) was driven by wanting to be noticed by Tifa and failing to protect her when kids, the fact Tifa stays by is side when he's on a wheelcair recuperating, the fact they fall together in the lifestream and Tifa guides him to find his true self and put his mind back together... And he's also Tifa's only interest!
On the other hand you have Aerith which still loves Zack, so... she's playing around a bit too much if you ask me xD
And the fact she stabs Tifa in the back and try to steal Cloud from her in my playthrough, I'm liking her less and less, she might be going permanently out of my party xD
Cause in the og mechanics afaik some dataminers found that aerith has the 'highest' natural score, so if you do nothing you end up with aerith, maybe she wasn't the canon choice, but she was the default choice.
Because when you're on the date with Aerith in the OG, she alludes to Cloud, and to the player, that Cloud is an unreliable narrator, which he turns out to be. It's a story-telling device to relay information. She's also the easiest to get from the point system in the background by your decisions in conversations.
In a casual playthrough of FF7 OG, you will always get Aerith unless you know what to do to get Tifa or Barret.
Square and the voice actors themselves have said theres no canon choice.
They also said that Sephiroth was the main antagonist and I've never agreed with that.
Maybe if you used your brain you wouldn't be here whining about a non-issue. I wanted Aerith as my date and so I kept an eye on the affection smiley faces of the party members and avoided sidequests for the ones who had the same colour face as Aerith, to make sure they didn't pass her. It was absolutely no issue.

I know how marketing works, so let me ask you a question. Who is more marketable: Jenova or Sephiroth?
I mean, it's sephiroth that makes the decision to reunite with her and change the world with her, no ? Besides, they're essentially the same entity.
Anytime they give a choice to "pick" a group in a fight, you should always pick the side with the person you are romancing. Every dialogue with every character matters too and has a point system. Even matching swimsuits with Aerith or Tifa gives you points. Doing synergy moves in battle with characters also gives them points. Sometimes you can see "your relationship with xyz changed" after a battle.
It sounds like you didn't do any of these extra points correct because you can do every mission and still get Tifa.
