Remake is fine to start with. I would start with the original, or remake.
Those are each in my top 5 favorite games ever.

Crisis Core is also fine to start with, but it is quite a bit worse than the other 3 main games below imo.

Ideally imo the order that makes sense. is
FF7 Original -> Advent Children(Movie) -> Dirge of Cerberus -> Crisis Core Reunion -> Remake -> Rebirth.

Remake > Rebirth > Episode 3 when it releases. They're direct sequels, like Lord of the Rings episodes.

The original is technically not being redone in this story, as there are some time travel elements but you do not need to play the original to get it as the game will adequately fill you in over Remake and Rebirth. That said, there may be some value in playing the original after you finish Remake and then either Remake hard mode or Rebirth afterwards. The original will clue you into some of the lore elements, events preceding this timeline, some subtle details about Aerith and Sephiroth, and so forth. Still, if you end up not wanting to it isn't required.

Crisis Core can be played at anytime or ignored, but it does add some depth to a somewhat important side character who shows up in Rebirth. Crisis Core isn't bad and if you skip the entirely optional side missions which are literal pure filler for all but maybe 10 of them the main story is about 10 hours but pretty decent.

You can watch the movie Final Fantasy Advent Children either immediately after whenever you play the original game or, if you never play the original, sometime after finishing episode 3 of the remake series when they finally release it. It will not really be properly received until details from either the original or episode 3 clue you in on some things that come after the end of episode Rebirth.

Crisis Core is a prequel, but it will spoil flashback scenes in Rebirth
Remake is part 1, and has DLC that should be played after the main game.
Rebirth is part 2.
Part 3 is still a few years away.

The main feature of the story in the remakes won't make any sense if you don't play the original. It's about an alternate timeline from the original, and the difference is frequently referenced when the main story comes up.

I'm sure there are plenty of people who don't like the original because it looks old and like this one, but I think... why not just play another action RPG? This is maybe one of the best ones on the market but there are still probably others that might gel with your taste better.

The answer has already been posted no need for your bottled up issues to come out.
Another thing about not playing the original is you won't fully appreciate what a tremendous leap they made in the mechanics of the game, what surprises they left in store for players familiar with the original, or just how faithful they stayed to the looks and acknowledgements of the original story. Also how much the combat takes from the original even though they're two completely different genres.

It'll be like reading a love letter to someone else.
