It really depends. If you're just playing the main game and ignoring all the side stuff, about 40 hours. If you just take your time or want to get 100%, then over 100 hours easily.

No, you do not even need to touch Ever Crisis. FF7 Remake+Intermission and FF7 Rebirth go just fine together.

Edit: IF you just want more lore, then Ever Crisis will help (back story, etc). But it's not necessary, especially since the Remake explains/changes most of the story anyways.

I would actually recommend Crisis Core. It gives a great deal of detail for Zack, Aerith, and Sepharoth and helps lay out the present story for FF7. Again, it's not required to understand the story but it does a good job laying the ground work.

WARNING: It's a real tragedy and tear jerker

This game is pretty big.
Only main story cost over 50 hours.
With sub quest, It is above 80 hours.
It also contains LOTS OF mini game.
Over all, It is easy to spend over 100 hours

The only otherwise “official” FFVII Rebirth lore is the book Traces of Two Pasts. I own it, but I haven’t read it yet. I will before the game is out, though.

Within the last month, I read On the Way to a Smile and The Kids Are Alright, the two tie-in books for Advent Children, and they added a lot of depth, so if Traces of Two Pasts is anything like those, it should be a good read.

The Kids Are Alright is also notable because it’s the original story for Kyrie and Leslie, though it’s set just before (and the epilogue is just after) Advent Children, so it’s a couple years ahead of the FFVIIR trilogy.

I did everything on the first playthrough, and it took me 120 hours.

You obviously don't have to do everything, but I did, because I really enjoyed it.
For the original FFVII, after the original game you’ve got the movie Advent Children (watch the Complete version at this point, as it was meant to replace the original) and its two books I just mentioned, the PSP game Crisis Core (Reunion would be the ideal way to play it now, but the original is also fine), and the PS2 game Dirge of Cerberus (it may or may not receive a remaster, that remains to be seen).

The mobile game Before Crisis was never released outside of Japan, and Ever Crisis is the latest thing, but as a mobile gacha game they’ve kinda shot themselves in the foot over that one if they wanted that to be lore relevant.

There’s also Last Order, an anime adaptation that’s an alternate telling of the Nibelheim incident from Tseng’s point of view, but it has several inaccuracies and it can be skipped.
