nah, the game basically fixes a bit of plotholes. Jenova messes with cloud since the first reactor. But the whole party around him doesn't care, Tifa just knows Cloud is talking BS about Nibelheim, but doesn't seem to care, that she never confides with anyone, that there might be something going on. So since no one really cares about clouds episodes in the og, they are a bit suprised that he suddenly attacks aerith.
I remember making a comment before release about how I would worry about the next game having a scene where the guys try to sneak a peek at the girls in a steamy bathouse, and a joke about them cooking with one of them being notoriously bad at it, but I completely forgot they already did that in this game. Heck, Costa Del Sol just went from a brush aside town onto something bigger to the overused "Hawaii class trip" trope.
I think if you were to ask somebody at SquareEnix they would tell you that the game feeling brighter was a deliberate choice. Living under Midgar was meant to feel oppressive and dark. Now they are out in the world and it should reflect that freedom (im sure they have said that in the promotional material) but honestly, it's like I said already. It's not the 90s anymore. Kids don't think that dark brooding Neo from the Matrix look is still cool. Modern game for modern audiences.
There is a reason why your grandparents use to sit around the TV watching TCM and TNT all day when they were playing shows you never remembered. It's because that's what they liked, but the rest of the world stopped making them. It's just our time now to cling to our classics because modern audiences are nothing like us.
You're not wrong. When Cloud and co. first arrive at Junon, Cloud can't compete with Angeal, Genesis, and Sephiroth, but I believe this is more of a mental thing than Cloud not being strong enough.
See, in Rebirth, it's Cloud that slays the Midgarsolom. Sephiroth possesses Cloud's body to do the deed. It looks like Sephiroth appears and does it, but that's because it's from Cloud's perspective. From the party's perspective, they just saw Cloud briefly go 1st class, and fling the Zolom and more or less passed out onshore once Sephiroth relinquished.
This is proven during the Gongaga ruined reactor incident. Before possession, Cloud is not dodging bullets and casually slicing these soldiers to ribbons. He's using his sword as cover. Zack couldn't dodge bullets either, but Sephiroth could. Cloud almost always fights two handed, but now he's fighting one-handed and dodging bullets? Sephy can do all this stuff in Cloud's body because Cloud's body is already capable. It just needs someone in the driver's seat that can use it.

Cloud surpasses Sephiroth when he beats him in the mindscape at the end of the OG FFVII using ominslash. The party is strong, but none of them are going to be running directly into a platoon of Shinra troops raining down automatic gunfire. The only reason Cloud can even do that is because he's a SOLDIER.
As far as defeating Sephy 1000 times, who knows? If the only timeline where Cloud defeats beats Sephy is gone now due to defeating the arbiter of fate, Cloud still has the intrinsic potential to defeat Sephy. It's no fluke or happenstance thing. So long as the party doesn't abandon him, Cloud ought to have a strong chance at realizing his true power.
De facto SOLDIER, better? It's a lot easier to just say SOLDIER when we all understand that Cloud is essentially a SOLDIER in every way save for title and rank instead of explaining why he's not SOLDIER, but walks, talks, and looks like a SOLDIER everytime we talk about FFVII lore.
But he never actually did anything SOLDIER, nor was he ever trained for SOLDIER. It's bizarre Roche even calls him SOLDIER.
His only trait of SOLDIER is Zach's memories.... He was dead before that.
Outside of Rocket Town Cid didn't have any scenes to where you even care what he was like outside of being verbally abusive to his wife
and it's 2025, Cigarettes are a step below hitler in society, of course they aren't going to have him smoking
Shera and Cid weren't married. She was an engineer who worked on the project, who owed her life to Cid. She felt responsible for his dream coming to an end.
He still abuses her, but he abuses every body in town.
