FF16 is the latest entry in the series while FF7 Rebirth is the second game of the "FF7 Remake project".
That's pretty much it.
Almost every FF is a stand alone story.

FF 7 (not the remake)
FF 7 Remakes (after you have played the old one)
It's called an anthology, hence why these games tend to spawn more entries.
16 worth a play at some point, Rebirth is a lot more fun with a LOT more to do.
Agreed with these recommendations, though I can't neglect 8 - it didn't click for a lot of people but it was my personal favourite. 7 was the best but 9 blew it away in many ways. 10 is a must play and I don't care what others say but I loved Blitzball.
For something more casual but still quintessential FF the 3D remakes of 3&4 are good games to get cheap on mobile or Steam. Still dated compared with the later ones which added meaningful endgame and exploration, but there is a reason the series was popular enough to keep churning out. It is not essential to play through them all though, at all. There is a recurring motif, but not a recurring or ongoing meta story.
But if I had to choose just one, play 9 and fall in love with its charm.
Crazy I never liked 9, 8 was my first Final Fantasy, and I loved it, then I played 7 and I loved it even more. 9 came out and it was a bit meh for me, it felt very linear after 7 & 8, then X came out and I loved it even though its probably just as linear as 9.
FF8 is absolute gold. The fact that many people didn't like it makes it even better to me.
I wouldn't start with FF7 Rebirth that's for sure.
At least, start with FF7 Remake, then Rebirth.
But as other have said, if you really want to experience Final Fantasy, I would start with the Playstation 1 era (if you are stuck on PC, Duckstation is the best way to experience those games imo). FF7 OG, FF8, FF9 are amazing. FF10 on PS2 is also very good.
If you just want to play modern Final Fantasy, I would say that FF7 Remake and Rebirth are good (but they lose a lot of their power if you don't know the original, though it's just my opinion).
I haven't played FF16 yet but the "Game of Thrones" vibes aren't really working for me. Maybe later.
Important to know that each Final Fantasy (with very few exceptions) is stand alone so you can play them in any order. The number is irrelevant.
