You must play all other games as they are all intricately connected. You also need to read all game of thrones books and watch at least the first 3 seasons of the office or you will be completely lost.
FF7 has been considered one of the best games of all time for decades now. A master piece of story telling. This game from what I've played so far stays pretty true to the original narrative wise. Some people might find some stuff kinda cheesy but its basically how I remember it.
This game is a retelling of Final Fantasy 7 from the mid-late 90's. Instead of the original style (turn-based, like Pokemon), this game has a hybrid style. You can push an attach button to fight and do combos, but you can also push a button to slow down the fight and choose special actions and magic.
All Final Fantasy games are self-contained unless they are direct sequels, like this game. You can play any of them in any order and get the whole story. This particular game is a sequel to Final Fantasy 7 Remake, so it would be best to play that one first before you jump into this one.
If you're into story and character-driven games, this could be a good one for you (after you finish Remake of course).
Your best bet would be getting Remake for cheap or buying it on steam and returning it before the 2-hour time limit after seeing if you like the game play.

OP I would just go get the steam version of the original FF7 and start there - Its 5 dollars right now on sale. You can also do 15 Royal if you want more action oriented but these remakes are different than the OG narrative wise. Each FF is completely separate from one another.
Edit: Forgot to mention its highly recommended that you know how to mod if you get into FF 1-9
