Seems a shame we may have to wait on a fix tho.
Was able to skip. As soon as Cloud was done crawling to get to Sephiroth I immediately skipped and successfully got to the next screen

I moved my FFVII Rebirth install to my M.2 NvMe drive.
Immediate results; Game loads faster, textures are there, eliminating the need for them to pop-in, and I was able to successfully skip the cutscene that was causing the crash.
Going to run some additional tests, but that's tomorrows stuff.
Let me know if anyone wants to know if I find out anything more tomorrow!
tl;dr: Moved game to a faster SSD. Crashing stopped.
