Were there other pre-purchase bonuses for the other Final Fantasy games?

I noticed that FINAL FANTASY VII REBIRTH has a pre-purchase bonus.

I think Final Fantasy XVI is the first one that’s actually a bit of an anomaly. You can argue that it was still relatively fresh, like World of Final Fantasy, but there was no alternative version like Maxima to consider, and all the DLC was already out. I think it should have come out complete in box, but it is what it is.

But yeah, moving forward, it’s likely that we’ll see PlayStation and PC, maybe even Xbox and Switch, releases all at once like many other publishers do things, and so we won’t have all the content available, there will be preorder bonuses as well as season passes, because that’s just the norm anymore.

I recently bought FINAL FANTASY® VIII, XIII, XIII-2 and X/X-2, but they don't have either a bonus as DLC or in the descriptions. I know what a pre-order bonus is, but maybe they've never been at the older FINAL FANTASY games.

On consoles, yes, all the time. Generally, by the time they come to PC, all that stuff is just automatically included. The ending of Sony exclusivity means that future games by Square will now have preorder bonuses even on PC, and you’ll have to wait for DLC releases. That’s the price for not having to wait.

There’s no such preorder bonus or DLC for the Steam edition of FFX|X-2 HD Remaster on Steam. In fact, there was no preorder for FFX|X-2 HD Remaster on Steam at all. Until more recently, Final Fantasy games on Steam just got released and you could buy them, often without any official announcement or fanfare.
