The only time Rebirth will interact with Remake is from the Main Menu where it scans your save files for saves of Remake and the Yuffie DLC. For these Save Files, you will receive extra Summon Materia.
For what it's worth, these saves don't even need to be from a completed game. You can simply start a new game in Remake, save, then quit and load the Save Files. This will also unlock the Summon Materia.
If you don't plan on playing Remake again soon, you can safely uninstall it, but keep your Save Files installed.

For fun?
The end might be the goal, but the idea is to enjoy the journey along the way. Grinding in FF7 Remake isn't just about carrying stuff over—it's about having fun with the combat, experimenting with different builds, and making the most of the experience as it is. If you're only thinking about what happens later, you might miss out on how satisfying the gameplay is right now
Yeah, normal runs of the game you cant really max everything. Corneo Colosseum helps witrh what you have at that stage but i totally get where your coming from.
