I checked with her regularly at first, but after a while I got tired of seeing the "Wait just a little longer" message and stopped checking her. When I eventually did it again and got her offer, I have no idea what happened in the meantime to open up the option. I didn't have much trouble finding her but I really wish I'd have had some indication of when it was time talking to her again.
Later in the game she asks for a princess (twice). One time it's so she can make 20 false princesses, so you should definitely give one to her (awesome deal!), but the other time she just gives you 20 young men/women in exchange, which is a garbage deal.
I'm OK with games that let you discover things for yourself, but The Dark Side was entirely too random and unbalanced for my tastes.
You need 100 young women for the Female Vampire unlock; AFAIK she takes them in two batches of 50. Once that's done there will be a Horde (infinite) of Female Vampires available at the Undead building near the Shelter.
You need 20 young women for the False Princesses convertion, also with Curie, once you have the 20 dresses.
You can pretty much never have too many young men. I've given 500 of them to Chief Sorug at the Shelter and I still haven't reached the maximum allowed, if there is even one, though it did unlock units like Archdemons and Bone Dragons.
Quite a few of the quests can't be completed on the island you got them from, but most do. In general you just have to do the islands in "order" (easiest to hardest), moving between them when needed. Often the quests can be completed soon after you get them, it's just that it's not obvious where you have to go to complete them.
There's more charts laying around than you need. More than half the time you grab a chart they'll tell you you already have it and give you a Wanderer scroll instead... which is still great, I got 8 Black Dragons from one of those scrolls.
All quests can be completed, it's just usually difficult to figure out who to talk to.
