I navigated to the video settings and used the square button on my Playstation controller to "reset to default." I confirmed and then changed my settings back to how I wanted it.
I haven't had that problem since.
i did that but it didnt work, the graphics look the exact same even if i change it from the lowest settings possible to the highest, theres no difference, the player models look terrible, the game looks super low res (im on 1080p) and it looks nothing like its supposed to

Just make sure if you're at 1080p you're either playing on DLSS (DLAA) or it is off.
If you have any form of DLSS/FSR/XESS you are effectively halving give or take an already low resolution.
1080p is fast moving hard to look good anymore, unless you're on 27 inches or left.
Try Nvidia or AMD super resolution also to upscale to 1440p or 4k.
Even upscaled to 4k resolution game looks ugly with low detailed textures and bland lightning. Only antialiasing improves.
I've tried many different things like using different GPU driver versions, rebuilding shader cache, fresh install of windows 11. Nothing helped so far.
What I've noticed is pre-gameplay cutscenes like player intros ,post game walk offs, auto replays etc. looks in much higher quality than gameplay, probably like it supposed to look in gameplay too.
