Report a translation problem
The idea is, once they become a certain level, they will have the option to take on a 2nd class. The thing is, when they reach this level and they CAN take on a 2nd class, usually you'll get the option to decide the class between two specific options dictated by that star.
As an example -
If Shinsuke Nakamura is a Specialist by default, and you reach him to X level through Ring XP, he can take on a new class. When you select his new class, it will provide you with two specific options, most likely Brawler or Fighter. From these two, you can decide which he can become. In this scenario, if you chose Fighter, you can now use the promo to change his class freely between Fighter and Specialist as you need.
Every superstar is different and what Second Class options they have available may vary and some superstars may not ever have access to a specific class (Like Cruisers having the ability to become Giants for example and vice versa).
As you found out, some superstars are already of level and already may have their second class picked out. You obviously found that out with LA Knight having the option to being a Giant, weird I know, but that's just how it plays,
