The first day of any season you should check all your prices because a lot of things will change. The calendar will tell you when events are and those will have some items change in price and the demand will increase during the event. Once it's done you need to adjust your prices again.
The customers during normal days wanting specific things should not be enough to hold your rep down. Early Spring also has the Flower Festival so be careful with that. If you want to push it up quickly you can use a cheap item such as eggs if you have chickens, trees, or buy a case of wheat. Price it below wholesale and every time somebody buys it you gain rep. If you get into a tight spot for money you can fish and just junkman the fish to make sure you can pay your bills. Your rep should only take 1-2 days to max.
The cleaning lady is essential imo she removes the dirty store chance so you really only have to worry about messed up prices screwing up your rep outside of events.
Also if you didn't know the cellar will freeze spoilage time. So every night you can put your 1 day left items into it and pull them out the next day. You can also have a new case and have it in your hands while looking at an older case and hit "V" to merge them and it will average the expiration dates.
A higher reputation increases your effective capacity, attracting more customers. For example, if your market capacity is 10 and your reputation is 50, your effective capacity is 5.
